Like other cuisines, southern food has numerous sub-categories. One of the best and most popular is southern desserts. Southerners can get pretty eccentric with their recipes, and that includes dessert recipes. Actually, I prefer to think of it as “creative” instead of “eccentric.”
Take this recipe, for example. It’s for biscuits That Are filled with jam and fruit and then fried. These are pretty quick and easy to make, and they’re really good.
Fried Jam Biscuits Recipe
Ingredients:
- Canned refrigerator biscuits
- ½ cup fresh peaches
- ½ cup peach jam
- Oil for frying
- Cinnamon sugar
Directions: Separate biscuits and place on waxed paper. Flatten each biscuit out to ¼-inch thick circles.
Peel and chop fresh peaches to get ½ cup. Combine peaches with peach jam. If the jam is too thick to blend well, soften it in the microwave for a few seconds.
Place a spoonful of the peach mixture in the center of each biscuit and fold the biscuit over, seal the edges with the tines of a fork.
Fry the biscuits in hot oil at medium heat until they’re golden brown and crisp on the outside. Drain on paper towels and sprinkle with cinnamon sugar. If you prefer, you can dust the fried biscuits with powdered sugar, instead.
