This is a flavorful BBQ chicken recipe with a southwestern twist. I like to use boneless, skinless breasts for this recipe, but you can also use boneless, skinless thighs, if you prefer dark meat. If you want to use bone-in chicken parts, you’ll need to adjust the cooking time and heat.

Southwestern BBQ Chicken Recipe

Ingredients:

  • 4 boneless, skinless chicken breasts
  • ¼ cup olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon vinegar
  • 2 teaspoons paprika
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Directions: Rinse chicken and pat dry. Place breasts between two sheets of plastic wrap. Use a meat mallet to tenderize and “flatten” chicken breasts so that each breast is about ½-inch thick all over. Remove and discard any bits of cartilage.

Combine olive oil, lime juice, vinegar, paprika, chili powder, salt, garlic powder, and onion powder. Dip chicken breasts in mixture.

Clean and oil grill grates. Heat grill to medium-high heat. Cook chicken breasts for about ten minutes per side, until done. Remove from grill and drizzle with extra lime juice.

Good side dishes for the grilled chicken include rice, baked potatoes, and grilled tomatoes. This chicken is also great cut into strips and served over a bed of mixed greens.
